  2. 1 litre apple juice
  3. 1 litre water (plus extra to.top.up)
  4. 1 litre apple cider
  5. 2 sticks cinnamon
  6. Handful whole cloves
  7. 3 apples
  8. Glaze Ingredients
  9. 100 g Brown sugar
  10. 100 g Honey
  11. handful whole Cloves
  12. 1 Cinnamon stick
  13. 1 tbsp Wholegrain Mustard

Instructions to make to make Cider honey glazed ham

  1. Place your meat into a large cooking pot. How long you boil your ham is determined by its size. πŸ–Cooking times - 1 hour for every 1 kg of meat. So for example I had a ham joint that was 4.8kg to I cooked it at this stage for 5 hours. If you have a smaller cut if 3 kg boil it for 3 hrs etc. πŸ– Ham can be on the bone or boneless unsmoked. πŸ–If you don't have a fresh joint then please make sure it is fully defrosted before you start this step.
  2. Add your equal parts fruit juice, cider and water. And then top up with more water to completely cover the meat. πŸ– The equal ratio of 1:1:1 liquids can be adjusted according to the size of meat and your cooking pot. You can increase to 2 litres of each cider, juice and water if needed. πŸ‘ I use cheap sweet Cider as it doesn't make since using expensive or acidic alcohol to boil.
  3. Add your cinnamon sticks, cloves and apples cut in half to the pot and bring to a boil. Reduce to a simmer and allow to cook for how many hours needed for the size of your meat. In this case 5 hours for me. πŸ‘ Top up with water now and again to keep the neat covered.
  4. After simmering remove from the heat and carefully remove meat from the pot onto a roasting tray. Drain and discard all the poaching liquids.
  5. Using a sharp knife score the top if your skin down into the fat to allow the glaze to get in.
  6. Combine your sugar, honey, cloves, mustard and cinnamon for the glaze in a small pot and heat until all combined and sugar has completely melted. Remove your cinnamon stick and cloves when ready. πŸ‘ TOP TIP: I always count how many cloves I have added to the stock and also to the glaze, so I can ensure that all are removed after cooking. It isn't very nice to accidentally bite down on a whole clove as they are very strong in flavour.
  7. Pour your glaze mixture over your ham and place in a hot oven at 180C for 10 minutes, remove and bast the meat with the glaze and return to the oven for a further 10 minutes.
  8. The meat is ready to serve. Plate up on your serving dish.
  9. I then place the remaining glaze leftover in the pan that ran off during the cooking into a gravy dish as an extra pouring glaze at the table. Sometimes I might add a teaspoon of cornstarch to thicken it but this isn't always necessary. Enjoy
