  1. Pull the leaves off of the kale stems, and tear into bite-size pieces. Combine the lime juice with the mushroom oil in a large bowl, add the kale and massage until it becomes fragrant and wilted and set aside to marinade for 30 minutes.
  2. Peel the bananas and keep the skin. Wash the banana skin, scrape off any flesh and cut into strips. Whisk the marinade ingredients together. Place the banana skins in the marinade and set aside to absorb the flavours.
  3. Dice the flesh of the banana. Add to the kale leaves with the artichoke, persimmon and pomelo. Toast the pumpkin seeds over a low heat and add with the pistachios to the leaves.
  4. Spray a frying pan with a little oil and heat on medium heat. Add the banana strips and fry on both sides until golden and crispy. Drain and set aside. They will crisp up as they cool. Or for healthier version, bake at 190 degrees C (375 degrees F) for five minutes flipping halfway through.
